In doing so however, nutritionally important vitamins and enzymes can be destroyed, and the color and flavor of the honey altered. Ambrosias unique water bath drum handling method operates at low temperatures to warm their honey gently and will not influence its natural qualities. And they simply strain it. As a result, you may find tiny particles of beeswax and pollen in their honey that serve to enhance its flavor and nutritiousness.
